If you are looking for a toast alternative for your gluten intolerant or breakfast rut patients, introduce them to sweet potato toast. Really, all you do is dissect a large sweet potato into ¼ inch lengthwise slices (leave the peel on for added fiber), pop ‘em in the toaster for 5 – 7 minutes on high and, voila! Vitamin A packed, fiber-filled breakfast base is formed. Slices can be topped with a savory bent with avocado and fleur de sel, an egg, cream cheese, capers, or smoked salmon. If a sweet breakfast is desired, look no further than your favorite nut butter, or cottage cheese with berries. If you figure the average sweet potato is around 115 calories, a slice of this nutrient-packed toast is probably under 30 calories and so versatile that there is a version for everyone.
