Cauliflower Rice is Nice

It  seems that there is just about nothing we can't use to replace gluten these days. Super creatively, cauliflower rice has popped up all over as a low-carb, paleo, gluten-free, vegan option for anything you could imagine: pizza, stuffed peppers, breadsticks, burrito bowls, and more. The easiest recipe is to process a head of cauliflower in the food processor until it is finely chopped and then microwave it for 3-5 minutes. More complicated recipes may include roasting the florets first, grilling the rice like a steak, or mashing the rice up like mashed potatoes. Because the flavor is so mild and neutral, it is like a blank canvas and suitable for the picky eater, and since the texture is spongy, sauces and spices absorb easily. The nutrition profile of cauliflower is healthful and full of fiber, vitamin C, protein, vitamin K, and folate.
